In the Kitchen: Spicy Southwestern Lettuce Wraps

 Lately, I have been on a lettuce wrap kick!  I have tried several different varieties and love them all.  So finally, I decided to make my own.  I have made them twice now, a little different each time.  Today, I made some lettuce wraps with a Southwestern flair that I would like to share with you!

Spicy Southwestern Lettuce Wraps

1- 12 ounce can of chopped white chicken breast
1- cup of broccoli slaw
1-small yellow bell pepper, chopped ( any color pepper)
2-Tablespoons of Pico de gallo
1/2 cup of  Roasted Salsa Verde
1-tsp Creole Seasoning
1/2 tsp- cumin
1-tsp of black pepper (optional)
Romaine or Iceberg Lettuce Leaves

In medium-sized bowl, add chicken and spices and mix well.  Next, add slaw, bell pepper, and  pico de gallo and mix well.  Lastly, add salsa and blend well with mixture. Add one tablespoon of Olive oil to a medium non-stick skillet.  Turn on medium heat.  When oil is hot, add chicken mixture to pan and "stir-fry" for about 10 minutes until veggies are tender and chicken thoroughly warmed.  Remove from heat.  Serve half cup of chicken mixture on one lettuce leaf.  Top with sour cream, salsa verde or picante.  Enjoy!
