In the Kitchen: Healthy Tostadas

We often think that eating healthy has to boring; however, that is not true.  One of my favorite meals to eat for lunch is tostadas.  Starting first with a crunchy chalupa shell, (most chalupa shells are about 50 calories each) you can add many healthy toppings.  We start with a thin layer of fat-free refried or black beans.  Second, we add a light layer of meat.  We usually use grilled chicken, but other choices would include brisket, baked fish, 90/10 hamburger meat, and even salmon.  Next, you can add a variety of toppings: low-fat cheeses, lettuce or fresh spinach, red or green onions, olives, tomatoes, bell peppers, fruit or tomato salsas, low-fat sour cream, avocado, broccoli slaw and much more. Two tostadas are very satisfying and perfect for a meal.   Tostadas are not only easy to make, they are fun too!  I usually put out several toppings and let each family member make their own.  I suggest you get creative, try a wide variety of toppings, and let your family help with preparation. I hope your family enjoys preparing and eating these tostadas as much as we do!  Have fun and feel free to share with us the unique toppings you use.  Remember, eating healthy does not have to be boring or tasteless!
